Stamina is raised by feeding your chao the orange fruit from the fruit trees in this garden. I then quit out with these animals in tow and gave them to my chao. I then went to the first checkpoint for a fourth monkey, then found two more on the grassy hill just up ahead. My route in Emerald Coast was to defeat the monkey on the left in a tilted tree, then one of the vehicle enemies, then a monkey high up, followed by the second vehicle. Try to reach a swim stat (not level) of 1000 and a stamina of at least 100. An excess of penguins over seals and otters will raise your fly stat, which isn't a bad thing consider piling penguins onto your chao consecutively between animal pickup runs if you're lucky enough.
